The Flower Pig Pork Set C was a highlight, featuring three different cuts of 360-hour dry-aged black pork:

  • Aged Black Pork Belly – Grilled by the staff to perfection, the pork belly emerged crispy on the outside and soft on the inside, delivering a satisfying contrast in texture with every bite.
  • Aged Black Pork Neck – Meaty and flavourful, offering a balanced bite that was juicy without being overly rich.
  • Aged Black Pork Jowl – The star of the set, this cut was exceptionally tender and melt-in-your-mouth, showcasing the benefits of proper aging and careful grilling.

The Beef Set B was equally indulgent, offering a premium selection of aged cuts:

  • Aged Premium Short Rib – Rich, beefy, and deeply flavourful.
  • Aged Wagyu Ribeye – Well-marbled and juicy, with a buttery mouthfeel.
  • Aged Wagyu Tenderloin – Soft, delicate, and clean in flavour, appealing to those who prefer a leaner cut.

A notable highlight of the experience was the attentive staff, who assisted with grilling at the table. This not only ensured that each cut was cooked at the optimal doneness, but also allowed diners to relax and focus on enjoying the meal.

Sauces That Elevate the Meat

Kott-Don360 offers an impressive variety of dipping sauces to complement the meats. Alongside standard Korean sauces, diners are encouraged to try the house specialties:

  • A homemade, slightly spicy oil dressing that adds depth without overpowering the meat
  • Super coarse salt, distinctly different from the usual coarse salt, enhancing the natural flavours of the meat with subtle crunch
  • Freshly grated wasabi, surprisingly mild and aromatic rather than spicy, pairing exceptionally well with both pork and beef

The spread also included comforting side dishes. The Potato Cheese Pancake was crisp on the outside and soft inside, with gooey cheese that made it an easy crowd favourite.

For something warm and soothing, the Spicy Seafood Tofu Soup delivered a fragrant heat balanced by silky tofu and seafood, while the Black Pork Kimchi Soup was robust and tangy, with deep umami notes that paired especially well with rice.

Throughout the meal, diners enjoyed unlimited banchan, offering a constant variety of textures and flavours to balance the richness of the grilled meats. Each table also received a non-refillable serving of cheesy steamed egg (which really gave the insta-worthy cheese pull!!), tteokbokki (korean spicy rice cakes), and fried pork, adding extra indulgence to the feast.
